Healthy Blueberry Pancakes... Say what???


I am a pancake lover. 
I am a high carb, super unhealthy breakfast lover.
My husband loves greasy meaty breakfasts, I love donuts, cinnamon rolls, pancakes, waffles, etc.
So you get the point.
Unfortunately, pancakes aren't so hot for the body so I try to ignore the longing in my stomach for some delicious pancakes every morning.
But then, one morning, God must have known I was needing pancakes.
 I was checking twitter and low and behold, my Pastor from Oklahoma's wife tweeted this recipe.
So of course, I took it as a sign from God and had to make these pancakes.
This wonderful gift is delicious and not to mention pretty dang healthy.
No sugar is in there what so ever.
But you'd never be able to tell.
So follow along, enjoy my "Pioneer Woman Wannabe" tutorial 
And then go make you some!

First, here is everything you need.
(yes I planned it out and organized everything so neatly on the counter for you)


Now you must make sure you are using whole wheat flour.
Now I could go into the health benefits of white vs. whole wheat, but I'll save that for another post.
So just trust me... you won't be able to tell your using healthier flour.... Promise.


Now that we are clear on that... let's move on.
Mix together 2 cups of whole wheat flour, 4 tsp of baking powder, 1 tsp of baking soda, 1/2 tsp of salt.
Once you have your dry ingredients combined then add the good stuff to make it look like this...


Add 1 cup of milk, 1 cup of plain yogurt, 4 tablespoons of olive oil, and 2 eggs.
Whisk all that together until just combined.

Now this next part is optional, but I STRONGLY recommend it....


1 cup of blueberries!!!!
I didn't have fresh ones on hand since Little Miss will eat a whole container in a setting,
so I used frozen and it worked just fine.
Fold in those blueberries, nice and gently like... 


Then cook them up.
These guys tend to spread a little more than normal pancakes, so read that as a little goes a long way.


Get them brown on both sides and then sit down and enjoy your wonderful breakfast.


Oh yeah and don't forget your syrup.
What's a pancake without syrup?
We use the all natural kind around here.
And I have to say this is one of my favorite breakfasts and it's so much better for you then a donut.

So please try this.
Not for me, but for you.
And your kids... they'll love you.
And of course your spouse will love you and then best of all.....
You'll day will be a good one because you started it off with these.

And the Medal of Honor Goes to.......


Last week the hubs was awarded the Medal of Honor.


I was so proud.  
I have always known he is a great cop, but it was so nice to see him recognized by his department.
However, I could have lived WITHOUT the situation that got him this award.
I've previously blogged about how I try to not think about his job.
In my head, he is walking old ladies across the street, and helping kids find their lost dogs.
It keeps me sane to think that way.

But then this crazy night happened.... 
and my husband had to be the hero and pop my perfect little bubble I lived in.

Long story short, a guy was holding a girl hostage and threatening to kill himself and her.
Caleb and his team went in, barricaded the car.
My dear husband VOLUNTEERED to break the car window where they were.
When he did, he had a gun pointed at him and another officer.
The bad guy shot, and ended up shooting the cop behind Caleb in the hand.
Yes my freaking husband almost got shot.
Then bad guy learned his lesson in a very tragic way.

All the officers were fine, until Caleb got home and then I almost seriously injured him.
I cried and scolded him and told him he couldn't do that again.
And then the police department TOTALLY didn't back me up and gave him a Medal of Honor instead.

Luckily, this incident was last year, so I had plenty of time to get over my anger before his awards ceremony.
And well, now I'm proud.  
My husband and his team put their lives on the line for someone they have never met.
I couldn't do that.
I'm in awe of my husband and I'm in awe of all the other officers who do this daily.
You are truly amazing and deserve so much more appreciation then you are given.

A Dining Room Makeover


Here is a before picture of my dining room.

It was awful!
That's what you get when you move into a bachelor pad.
I threw in some of my things, but it still wasn't working no matter how hard I tried.
So I made a few changes....
1-  Painted it a creamy off white color
2-  New curtains!
3- We got new dining room furniture from Caleb's grandma.
(I love furniture that has some history behind it)
3- And I HATED that light fixture- HATED it.  So I painted it, and added cute little lamp shades.
And voila....

So much better.  (Excuse the lazy susan in the middle of the table)
My husband is really a 5 year old trapped in a 28 year old body and LOVES this thing.
So yeah, it stays.  Pick your battles' ladies!  :)

Now let's talk about these curtains... these were my cheap find and I am in LOVE with them.
I started with these.  They were a little to short, and plain and blah!  
I do love browns in my kitchen but I needed a little something to make them stand out.




So..... I ripped apart my Target clearance curtains.
Yes that's right ripped them apart.
And then I sewed new fancy material that I got for half off to the top to make them longer and more decorative.
The fabric would have been a little to busy if I had just used that, but adding it to the top of my curtains seemed to do the trick.
And then of course, I just made a couple quick tie backs with the left over material. 
 I have to say I was pretty satisfied with the end result.
Now if only I'd thought to take a picture of each step then I could give you a step by step.  
But I didn't....  so you just get before and after pictures instead.
I know, I know failure on my end.


Well there is my DIY project for the week. 
Note:  I do a lot of DIY projects, but the majority of them don't turn out so cute.
But this one I was proud of, so I had to brag!  :)

Now I'm just looking for other cheap things to do.

A Surprise Gem in the Middle of Oklahoma

I've been a little busy.
Traveling, corraling a 20 month old, setting up for my sister's wedding,
packing, etc.
It's been a little nutty, but it's also been so fun to be with my family.
Oh how I love them!

 The night before the wedding, all the bridesmaids got to stay in a bed and breakfast.
It was such a perfect little place.
Such a sweet little relaxing retreat to rest before the chaos of the big day began.


We woke up, ate a delicious breakfast and then lounged out by the pool.


I was champ mom, and didn't pack swimsuits, so Little Miss enjoyed lounging on the lawn chairs putting on her "lotion"  (aka. contact solution)  Don't worry I didn't let her actually rub contact solution all over her, but she sure was good at pretend.


The backyard was beautiful.
Full of beautiful gardens of flowers and fun little places to explore.


I really wish I had taken more pictures, but keeping a very active kiddo in check took most of my attention and I only snapped these few pictures.

Little Miss and the Sweet and Sassy Salon

Little Miss accomplished a huge milestone today.
She got her hair cut.
I mean my girl can definitely rock the Little Cute Ragamuffin look but we really needed some help with this hair.


She is supposed to be the flower girl in my sister's wedding this week, so that called for a hair intervention.
I, the responsible intervention leading parent, packed up said kiddo and headed off to the Sweet and Sassy Salon.
Side note on this place, it is seriously a little girl's dream. A Chuckie Cheese for girls!
Not only is it a hair salon, complete with TV's at each station to distract the kids from the sharp scissors that are coming at their face.
But it also has a little manicure/pedicure place and a runway for the girls to walk down after they get all dolled up.  After each hair cut they get a glitter hairspray and a sparkle tattoo put on them.  (I decided to not participate in the extra sparkle)  We were pushing our luck with just the hair cut.

Case and Point.  
Yep, she was thrilled!


 However, give the girl a couple of combs and Yogi Bear on her own personal TV and she sits pretty nicely so the stylist can work her magic.

Yes, they even took a mini 1/2 inch curling iron to her hair and curled it all up for her.

And the best part of this whole experience in Blake's eyes was...


She got her very own, pink flower sucker.
All in all, very successful trip.


And then a moment of sadness realizing your baby is getting a little to big.
But at least her hair is looking good now.

The New Way to Grocery Shop

So it's 9:30 at night.
I just finished my grocery shopping and watched Fashion Star (my latest obsession)
No, I didn't make a late night run to Walmart and stream the show from my phone.
Now that I'm thinking about it, maybe that's the way to make Walmart shopping bearable.
Hahaha, I kid... ok not really, sorry Walmart fans!

Ok so moving on....
How did I do this??  
It's called Mile High Organics.
If you live in Colorado you must MUST check this out.


I will never shop another way... EVER!
So if you don't live in Colorado, see if you can find something similar in your area.

I'm saving money (you get a live total every time you put something in your cart), and I'm buying organic.  Plus, I get to do it while watching TV.
And it sure beats not having to lug a toddler around the grocery store!!
WIN, WIN, WIN!


We've been eating mostly organic since I was pregnant and at first it was so super expensive.
And with my job change (pay cut) I took, I didn't think I could keep this up.... but then one of my friends told me about this and, Wow, I'm in love.



All right, now I'm done being a shopping nerd.
When I find exciting ways to shop, I have to share.


And as soon as Little Miss is old enough, she will get to unload the groceries by herself.
How is that for zero stress shopping!  :)
